Mounting EMT and Boxes to Metal Siding

Can I attach EMT and outlet boxes directly to the sheet metal siding of a steel shop building?

You did not mention interior or exterior. If exterior, then the fittings require listing for wet locations in accordance with Sec. 314.15. Exterior (i.e., wet locations) will also require corrosion protection, such as galvanized.

Will the raceway be subject to damage? If yes, then no to EMT.

Steel EMT on steel walls should be acceptable. See Sec. 358.12(6) regarding dissimilar materials. Aluminum EMT on steel walls, maybe not so much.
